Vineyards: 25 years, 350 metres above sea level, S exposure.
Soil: Marl, slate, clay, and sandstone.
Harvest: Hand-picked, beginning of September.
Vinification: 2 weeks of maceration without temperature control, interlinked with spontaneous fermentation. No yeasts added. No filtration.
Maturation: 12 months in used 225 L barrels.
Sugar level: Dry, 1g or less of residual sugar.
Alcohol content: 12.5 % vol
Bottles: 0.75 L
Serving temperature: 14-18°C
